Butter Pecan Pie
A Southern favourite, guaranteed to melt in your mouth.
Ingredients:
- 1 9" pie shell, unbaked
- 3 eggs
- 1 tsp lemon juice (5 ml)
- 1 tsp vanilla (5 ml)
- pinch of salt
- 2 tablespoons butter, softened
- 1 cup brown sugar
- 1 cup corn syrup
- 1 1/2 - 2 cups pecans
Steps:
- Preheat oven to 350° F
- Beat eggs with a whisk until frothy Add lemon, vanilla and salt. Mix well.
- Melt butter and add to above.
- Slowly add brown sugar a little at a time, beating mixture well.
- Add corn syrup and blend well.
- Place pecans in pie shell.
- Cover pecans with mixture and press down pecans with hands so they get completely covered, because pecans will float to the top.
- Bake in a preheated oven at 350° F for 40 minutes.
- Reduce heat to 325° and cook for another 15 minutes or until the top of pie is browned and feels firm but not dry to the touch.
